What are Blondies?

If you’re new to blondies, you’re in for a treat. Blondies are dessert bars flavored with brown sugar and butter (the best!) and they taste like a gooey, freshly baked cookie bar!

Similar to homemade brownies, these easy bars come together in about 15 minutes (no mixer required!) and don’t rely on leavening agents like baking powder or baking soda (which equals super chewy blondies).

Homemade blondies are the perfect canvas for any number of mix-ins, from chocolate chips and toffee bits to white chocolate chunks, peanut butter cups, and chopped nuts.

Essential Ingredients

  • Butter – We’re adding plenty of salt to balance out the flavor of the blondies, so unsalted butter is best.
  • Brown sugar – You can use light or dark brown sugar in this recipe. Dark brown sugar will add a bit more molasses flavor to the bars.
  • Egg – One large eggs binds the blondie batter together.
  • Vanilla – Two teaspoons vanilla extract flavors the blondies. My favorite is Rodelle Gourmet Vanilla Extract.
  • Salt – For flavor. Don’t skip the extra sprinkle of flaky salt over the baked blondies.
  • Flour – Use all-purpose flour in this recipe.
  • Toffee bits – A must for Heath bar blondies! I use Heath Toffee baking bits. If you can’t find those, you can also crush up a Heath candy bar (yum!).
  • Chocolate chips – Semisweet or dark chocolate chips are both delicious.

How to Brown Butter

Brown butter adds rich flavor to these blondies. To make brown butter, cook butter in a heavy saucepan over medium heat, stirring constantly.

As the butter melts, it will start to foam. Continue cooking until the foam clears and the color changes from golden to deep brown, with a nutty aroma – this takes about 5 to 6 minutes.

Alternatively, you can make these blondies with melted butter.

How to Make Chocolate Toffee Blondies

Pour melted brown butter into a medium bowl. Let cool for 5 minutes, then add brown sugar to the mixing bowl.

Whisk brown butter and brown sugar together until combined. Add one large egg, vanilla extract, and salt.

Whisk wet ingredients until smooth and combined. Add all-purpose flour.

Gently stir in flour with a rubber spatula just until incorporated.

Add toffee bits and semisweet or dark chocolate chips and gently fold in to combine.

Scrape blondie batter into prepared 8-inch square baking pan. Bake for 25 minutes, until golden and set in the middle, and a toothpick inserted in the center comes out clean or with a few crumbs attached.

Sprinkle blondies with flaky salt (I like Maldon) and cool completely before cutting into squares. Enjoy with a glass of milk!

Description

Rich and chewy chocolate toffee blondies flavored with brown butter, chocolate chips, and toffee bits are the BEST dessert bars! You’ll love this easy blondie recipe.

Ingredients

  • 10 Tbsp (140 g) unsalted butter
  • 1 cup (200 g) light brown sugar
  • 1 large egg (50 g), at room temperature
  • 2 tsp (8 g) vanilla extract
  • 1/4 tsp salt
  • 1 cup plus 2 Tbsp (158 g) all-purpose flour
  • 2/3 cup (100 g) toffee bits
  • 2/3 cup (113 g) semisweet chocolate chips
  • flaky salt, for topping

Instructions

  1. Preheat oven to 350°F and line an 8-inch square baking pan with parchment paper.
  2. Brown butter: Cook butter in a heavy saucepan over medium heat, stirring constantly until it foams, turns clear, and then turns a deep brown, about 6 minutes. Pour brown butter into a medium bowl and let cool for 5 minutes.
  3. Make blondies: Add brown sugar to bowl with melted brown butter and whisk until combined. Whisk in egg, vanilla, and salt until smooth. Fold in flour just until incorporated, then fold in toffee bits and chocolate chips. Scrape batter into prepared pan and use a piece of parchment paper coated with nonstick spray to press batter evenly into pan; tap pan sharply to remove air bubbles.
  4. Bake blondies for 25 minutes, until golden and set in the middle, and a toothpick inserted in the center comes out clean or with a few crumbs attached. Sprinkle with flaky salt and cool completely in pan on a wire rack.
  5. Carefully lift parchment to remove bars from pan and place on a cutting board; cut into squares with a sharp knife.
  6. Store leftover blondies in an airtight container at room temperature for 2 to 3 days.

Notes

Brown sugar: You can make these blondies with light or dark brown sugar.

Brown butter: Check out my full step-by-step recipe tutorial.

Freeze blondies: To freeze blondies, cool completely before wrapping with plastic wrap and placing in a freezer bag. Freeze up to 3 months. Thaw blondies at room temperature (still wrapped to prevent condensation from forming) before serving.

  1. These are amazing! I made peanut butter cookies and coconut lime shortbread cookies and these…..no one talked about anything but the blondies! Delicious and they come out of the pan easily. A winning recipe to add to the collection.

  4. Sounds so yummy!! Just curious, what type of toffee bits do you use? I want to make this, but not sure which to use. Do you chop up toffee or use prepackaged bits? Thanks!
