It’s so much easier (and faster!) than homemade apple pie, yet just as delicious. The skillet ensures that the pastry bakes up crisp and flaky, and the apple slices are nice and tender.

Success Tips
Fresh lemon juice adds brightness and prevents the apple slices from discoloring. I like to squeeze the lemon juice into a large bowl, then add the apple slices and toss well to coat before adding the remaining filling ingredients
Thinly slicing the apples (approximately 1/8-inch thick) ensures that they cook through evenly. I use this same technique in my apple tart recipe. For the best flavor, I like to mix apple varieties (Honeycrisp and Granny Smith are two of my favorites), and use firm apples that hold up well in the oven.
Apple Galette, Step by Step
Transfer a rectangle of puff pastry to a cast iron skillet and chill for 10 minutes. Toss sliced apples with lemon juice and vanilla until combined.
Add granulated sugar, cornstarch, cinnamon, and salt to the bowl with the apple slices and toss together until well coated.
Arrange the apple filling evenly over the chilled puff pastry sheet. Drizzle with a couple teaspoons of filling juices, and dot the apples with cubed butter.
Fold up the edges of the pastry, then brush with heavy cream and sprinkle with coarse sugar.
Start with a burst of high heat (425°F) for 10 minutes, then reduce the temperature to 375°F and continue baking until pastry is nicely golden and baked through.
Add a warm drizzle of homemade caramel sauce and prepare to dive in. It’s irresistible to the last bite!

Ingredients
- 1 sheet puff pastry (250 g), thawed (see note below)
- 2 tsp (10 g) fresh lemon juice
- 1 tsp (4 g) pure vanilla extract
- 4 cups (480 g) peeled and sliced apples (1/8-inch thick)
- 1/2 cup (100 g) granulated sugar
- 2 Tbsp (16 g) cornstarch
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 2 Tbsp (28 g) cold unsalted butter, cubed
Assembly
- 1 Tbsp (15 g) heavy cream
- 1 Tbsp (15 g) coarse sugar
Instructions
- Preheat oven to 425°F. Place puff pastry sheet on a lightly floured piece of parchment paper and roll out sheet into a roughly 11 x 12-inch rectangle. Transfer to a 9 or 10-inch cast iron skillet and chill for 10 minutes while you prepare the filling.
- Make filling: Add lemon juice and vanilla to a large bowl. Add sliced apples, tossing well to combine. Add granulated sugar, cornstarch, cinnamon, and salt to the bowl. Toss to combine.
- Assemble galette: Arrange the apple filling evenly over the chilled puff pastry. Drizzle apples with two teaspoons of filling juices and dot with cubed butter. Fold up the edges of the pastry, pressing the edges firmly to seal. Brush pastry with heavy cream and sprinkle with coarse sugar.
- Bake galette for 10 minutes at 425°F. Without opening the oven door, reduce temperature to 375°F and continue baking another 35 to 40 minutes (for a total baking time of 45 to 50 minutes), until the apple filling is bubbly and the pastry is golden and cooked through.
- Remove skillet from the oven and place on a wire rack. Use a thin metal spatula to loosen the edges and the bottom of the warm galette from the skillet. Let cool for 10 minutes before serving.
Notes
Puff pastry: If using a pre-rolled puff pastry sheet (such as Whole Foods Pre-Rolled Puff Pastry), carefully unroll the thawed sheet and transfer it directly to the skillet.
