peach cookie bars

in Bars & Bites

Every bite of these peach cookie bars is pure bliss. Start with a cinnamon-graham base, add a juicy peach filling, and top it all off with buttery crumbs for a trifecta that’s hard to beat. Understandably, I baked two pans of these bars in as many days, and a platter of peaches on the dining table is currently tempting me into a third.

Peach Cookie Bars | Tutti Dolci

If you’ve been following the blog recently, you’re probably aware of my fixation with graham flour (cinnamon graham banana bread, brown butter cherry bars, etc). I’m happy to include a Bob’s Red Mill giveaway with this recipe – three of you will receive your own package of graham flour to bake with. See the details below (and don’t blame me when you find these peach bars wonderfully addictive!).

Peach Cookie Bars | Tutti Dolci

Peach Cookie Bars
1 1/4 cups flour
1/4 cup graham flour
1/8 tsp baking soda
1/8 tsp salt
1/2 tsp cinnamon
pinch of nutmeg
1/2 cup unsalted butter, melted
1/4 cup sugar
2 Tbsp brown sugar
1/2 tsp vanilla extract

Filling
1/4 cup peach jam
1 cup sliced peaches
1 Tbsp turbinado sugar

Preheat oven to 350°F and line an 8-inch baking dish with parchment paper. Whisk together flours, baking soda, salt, cinnamon, and nutmeg in a medium bowl. Combine melted butter, sugars, and vanilla in a medium bowl. Add flour mixture and fold in until incorporated. Reserve 1/2 cup of dough for topping; press remaining dough evenly into bottom of prepared baking dish.

Place jam in a small bowl and microwave briefly (about 10 seconds); whisk to loosen. Use a small spatula to gently spread jam over dough. Arrange peaches over jam and sprinkle with turbinado sugar. Crumble remaining dough over filling and bake for 25 to 27 minutes, until golden. Cool completely in baking dish on a rack, then cut into bars with a sharp knife. Store leftovers in an airtight container in the refrigerator up to 2 days.

Yield – 12 bars
Calories – 175 (per bar)
Carbs – 25

Wow these look SO good and the photos are great! I’ve just bought loads of peaches so I’ll give it a go. I’ve never heard of graham flour, I’m in France at the moment and not sure they have it. Could I just use normal whole wheat flour?
