Cheesecake Essentials
Room Temperature Ingredients – Room temperature filling ingredients are absolutely essential for a smooth and creamy cheesecake. Cream cheese should be softened, and sour cream and eggs should be at room temperature.
How to Soften Cream Cheese – To soften cream cheese quickly, cut the blocks of cream cheese into cubes and place on a microwave-safe plate. Heat cream cheese in the microwave in 8-second bursts until softened.
Careful Mixing – Mix the filling on the lowest speed (stir) of a stand mixer, just until combined. To avoid overmixing, scrape down the bowl frequently with a rubber spatula.
How to Make Blackberry Almond Cheesecake
Springform Pan – Use a 9-inch springform pan. Brush the bottom and sides of the pan evenly with softened butter. Line the bottom of the pan with a round of parchment paper.
Almond Crust – To make the crust, whisk together almond flour, brown sugar, cinnamon, and salt in a medium bowl. Add melted butter and mix in until completely incorporated. Press crust firmly across bottom and 1/2-inch up sides of prepared springform pan. Pack the crust tightly with the bottom of a measuring cup.
Par-Bake Crust – Bake crust at 350°F for 12 to 14 minutes, until light golden and set. Remove from the oven and place on a wire rack to cool for 30 minutes. Reduce oven temperature to 300°F.
Crust Alternatives – If you’re allergic to almonds or don’t have almond flour on hand, you can substitute 2 cups of graham cracker crumbs, Biscoff cookie crumbs, chocolate wafer crumbs, or shortbread cookie crumbs. Depending on the type of crumbs you use, you may need additional butter for the crust. Use enough melted butter to form a sandy mixture that can be easily and tightly packed into the springform pan.
Filling – Mix softened cream cheese, sugar, arrowroot starch, and salt on low speed for 1 minute. Scrape down the bowl with a rubber spatula. Add sour cream, vanilla extract, and almond extract. Mix on low speed for 30 seconds, then scrape down the bowl. Add eggs one at a time, mixing in each egg on low speed just until combined, about 10 seconds. Scrape down the bowl after each egg. Pour filling over the crust and smooth top with an offset spatula.
Bake – Bake cheesecake at 300°F for 60 to 65 minutes, until edges are set, the center is still slightly wobbly, and the cheesecake is slightly puffed.
Cool Cheesecake – When the cheesecake is finished baking, immediately turn off the oven, prop the oven door with a wooden spoon, and cool the cheesecake inside the oven for 75 minutes.
After 75 minutes, remove springform pan from the oven and place on a wire rack. Carefully run a thin metal spatula around the edge of the cheesecake to make sure it’s not sticking to the sides of the springform pan. Cool cheesecake for 1 hour on the rack.
Chill Cheesecake – Move cheesecake to the refrigerator (uncovered to prevent condensation from forming) and chill overnight.
Blackberry Topping – Combine blackberries, sugar, salt, and almond extract in a saucepan. Bring to a boil, gently crushing half of the berries with a spatula, cooking until the berries start to soften. Reduce heat to low. Whisk together arrowroot starch and water in a small bowl. Add to saucepan and stir in. Simmer until mixture is slightly thickened.
Transfer sauce to a glass bowl and cool to room temperature before using. Blackberry sauce can be made 2-3 days ahead and refrigerated. Re-warm to room temperature before using.
Assemble Cheesecake – Top the cheesecake with spoonfuls of blackberry sauce, smoothing with an offset spatula. Pipe almond whipped cream around the edge and topped with sliced almonds.

- 4 large eggs, at room temperature
Blackberry Sauce
- 2 cups fresh blackberries
- 1/2 cup sugar
- 1/8 tsp salt
- 1/4 tsp pure almond extract
- 1 1/2 tsp arrowroot starch
- 1 Tbsp water
Almond Whipped Cream
- 1 cup cold heavy cream
- 1/2 cup powdered sugar
- 1/2 tsp pure almond extract
Instructions
- Preheat oven to 350°F. Brush the bottom and sides of a 9-inch springform pan evenly with softened butter. Line the bottom of the pan with a round of parchment paper.

Hi Christina, yes you can use an equal amount of cornstarch instead. I like using arrowroot starch for a fruit sauce or topping because it creates a smooth, shiny sauce (cornstarch can make a sauce more cloudy or opaque). Bob’s Red Mill arrowroot starch is what I typically use and can find at the grocery store.
