Soft Molasses Cookie Recipe

Soft molasses spice cookies are super chewy and perfectly spiced! These cookies are filled with the cozy flavors of molasses, ginger, and cinnamon!

Beat softened butter, granulated sugar, and light brown sugar in the bowl of an electric mixer until creamy.

Step 1

Mix in molasses until combined.

Beat in egg and vanilla until combined.

Step 3

Add dry ingredients and beat just until incorporated.

The mixed dough will be soft so chilling is a must. Cover dough and chill in the refrigerator for 2 hours.

Once dough chills, scoop 1 1/2-inch balls of dough and roll to coat in granulated sugar.

Place dough balls 2 inches apart on parchment-lined baking sheets.

Step 7

Bake cookies for 13 to 14 minutes, rotating pans halfway through, until cookies are crackly. Once cool, drizzle with vanilla glaze.
