Easy Lemon Shortbread

Classic shortbread cookies get a burst of fresh, zesty lemon flavor in these slice and bake lemon shortbread cookies! Recipe makes 24 cookies.

Make lemon sugar: Pulse granulated sugar and lemon zest for 1 minute until zest is finely ground.

Step 1

Make dough: Beat butter, lemon-sugar, vanilla, and salt in a large mixer bowl until soft and creamy (about 2 minutes).

Step 2

Turn off the mixer and add all of the flour.

Step 3

Mix in on low speed until dough begins to come together in large pieces. Divide dough into 2 logs, wrap well, and chill for 1 hour.

Step 4

Roll chilled logs of dough in granulated sugar to coat.

Step 5

Use a sharp knife to slice logs into 1/2-inch thick rounds.

Step 6

Place rounds two inches apart on baking sheets and chill for 20 minutes.

Step 7

Bake cookies for 14 minutes, until golden. Cool for 5 minutes on baking sheets, then transfer to a rack to cool completely.

Step 8

Dip tops of cookies in lemon glaze (or drizzle with glaze) and let set before serving.
