Make lemon sugar:
Pulse granulated sugar and lemon zest for 1 minute until zest is finely ground.

Make dough:
Beat butter, lemon-sugar, vanilla, and salt in a large mixer bowl until soft and creamy (about 2 minutes).

Turn off the mixer and add all of the flour.

Mix in on low speed until dough begins to come together in large pieces. Divide dough into 2 logs, wrap well, and chill for 1 hour.

Roll chilled logs of dough in granulated sugar to coat.

Use a sharp knife to slice logs into 1/2-inch thick rounds.

Place rounds two inches apart on baking sheets and chill for 20 minutes.

Bake cookies
for 14 minutes, until golden. Cool for 5 minutes on baking sheets, then transfer to a rack to cool completely.
