Homemade Gingerbread Biscotti

STEP 1:

Whisk together melted butter, molasses, sugars, and vanilla in a large mixing bowl. Whisk in eggs one at a time until smooth.

STEP 2:

Add flour mixture to mixing  bowl and gently stir in until incorporated.

STEP 3:

Cover the mixing bowl with plastic wrap and chill dough for 45 minutes.

STEP 4:

Divide dough in half and shape into 2 (10-by-4-inch) loaves. Bake loaves for 30 minutes, until the tops are set.

STEP 5:

Once loaves have slightly cooled, use a serrated knife to cut loaves into 1/2-inch slices. Bake slices for 14 more minutes, until lightly browned.

STEP 6:

Use 8 ounces of high quality white chocolate to dip the cookies, such as Ghirardelli white chocolate baking bars

STEP 7:

Melt white chocolate until glossy and smooth. Dip each cookie in the melted white chocolate and place on baking sheets.

Sprinkle with sanding sugar and enjoy!
