Lemon Poppy  Seed Muffins

Bakery-style lemon poppy seed muffins! The soft, cake-like muffins are flecked with fresh lemon zest and topped with a drizzle of sweet lemon glaze.

Mix dry ingredients: Whisk together flour, granulated sugar, poppy seeds, baking powder, baking soda, salt.

Step 1

Combine milk, sour cream, melted butter, egg, fresh lemon zest, and vanilla extract in a medium bowl.

Step 2

Whisk until smooth.

Step 3

Add wet ingredients to dry ingredients.

Step 4

Gently fold together with a spatula just until combined – the muffin batter will be fairly thick.

Step 5

Fill each baking cup 3/4 full of batter.

Step 6

Bake muffins at 400°F for 5 minutes, then reduce heat to 350°F and bake another 11 to 13 minutes.

Step 7

Drizzle with lemon glaze and enjoy!
