Chocolate Chip Shortbread

Simple and delicious chocolate chip shortbread filled with mini chocolate chips! These easy shortbread cookies are made with just 7 ingredients.

Make dough: Beat butter, sugar, vanilla, almond extract, and salt in a large mixer bowl until soft and creamy.

Step 1

Turn off the mixer and add all of the flour.

Step 2

 Beat in on low speed until incorporated and dough begins to come together in large pieces.

Step 3

Add mini chocolate chips (dark or semisweet) to the mixer bowl.

Step 4

Mix in until incorporated. The shortbread dough will be somewhat crumbly but will hold together when pressed.

Step 5

Press shortbread dough into a parchment-lined cake pan and prick all over with a fork.

Step 6

Sprinkle the top with granulated sugar.

Step 7

Bake shortbread until lightly golden and set, about 36 minutes. Cool for 1 hour in pan.

Step 8

Remove warm shortbread from pan and cut into wedges with a sharp knife. Let cool.
