Combine chocolate and butter in a double boiler or in a heat-proof bowl over a saucepan of gently simmering water.

Step 1

Slowly melt the chocolate until smooth and  glossy. Set aside to cool slightly.

Step 2

Combine eggs, granulated sugar, light brown sugar, and vanilla extract in a large mixer bowl fitted with a whisk attachment.

Step 3

Whisk together on medium speed (speed 4 on a KitchenAid mixer) for 5 minutes, until pale and doubled in volume.

Step 4

Add melted chocolate to the mixer and mix in on low speed for 1 minute.

Step 5

Add flour mixture and mix in on low speed for 20 seconds, just until combined.

Step 6

Add semisweet chocolate chips to the mixer bowl.

Step 7

Fold in chocolate chips with a silicone spatula. Dough will resemble a gooey brownie batter.

Step 8

Space cookies 3 inches apart, 9 or 10 per baking sheet. Bake cookies at 350°F for 12-14 minutes, until cookies are shiny with crinkle tops.

Step 9

Sprinkle cookies with flaky salt and enjoy!
