STEP 1:

Combine chocolate and butter in a double boiler or in a heat-proof bowl over a saucepan of gently simmering water. Slowly melt until smooth and glossy.

STEP 2:

Combine eggs, granulated sugar, light brown sugar, and vanilla in a large mixer bowl fitted with a whisk attachment.

STEP 3:

Whisk together on medium speed (speed 4 on a KitchenAid mixer) for 5 minutes, until thick and voluminous.

STEP 4:

Add melted chocolate to the mixer and mix in on low speed for 1 minute.

STEP 5:

Add flour mixture and mix in on low speed for 20 seconds, just until combined.

STEP 6:

Fold in chocolate chips. Dough will resemble a gooey brownie batter.

STEP 7:

Space cookies 3 inches apart, 9 or 10 per baking sheet. Bake cookies at 350°F for 12 to 14 minutes, until tops are just set.
