Ingredients
- 2 pounds (900 g) apples, peeled and chopped
- 1/2 cup (100 g) sugar
- 1/4 cup (55 g) light brown sugar
- 1/2 cup (125 g) pure apple juice
- 1 Tbsp (15 g) lemon juice
- 1/4 tsp cinnamon
- 1/8 tsp cloves
- 1/8 tsp salt
Instructions
- Combine apples, sugar, brown sugar, apple juice, lemon juice, spices, and salt in a heavy saucepan over medium high heat. Bring mixture to a boil, then reduce heat to low and simmer until the apples are softened and begin to break down, about 15 minutes. Remove from the heat and let cool for 5 minutes.
- Carefully transfer the mixture to a food processor and blend for 1 minute, or until smooth and pureed (with the texture of applesauce).
- Return the mixture to the sauce pan and continue simmering for another 30 minutes, or until the apple butter is a medium caramel and holds its shape on a spoon.
- Transfer apple butter to a glass bowl or measuring cup and let cool to room temperature before using.
- Store apple butter in an airtight container in the refrigerator up to 2 weeks.
