October has blown in like a fluttering crimson-orange leaf in an increasingly cool breeze. My thoughts (and cravings) have shifted to comfort. These coffee cake-style maple cinnamon pecan muffins make a fitting transition. With a maple sugar, cinnamon chip, and pecan streusel topping, muffin tops have never looked so appealing.

Maple Cinnamon Pecan Muffins
3 Tbsp King Arthur Flour maple sugar
3 Tbsp flour
1/8 tsp cinnamon
1/4 cup King Arthur Flour cinnamon mini baking chips
1/4 cup pecans, chopped
2 Tbsp unsalted butter, melted and slightly cooled

1 1/4 cups flour
1/4 cup King Arthur White Whole Wheat Flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/2 cup low-fat buttermilk
1 cup plain fat-free yogurt
1 large egg, lightly beaten
1/3 cup maple syrup
2 Tbsp vegetable oil
1 1/2 tsp vanilla extract

Preheat oven to 350°F and line a 12-cup standard muffin pan with baking cups; spray baking cups with cooking spray. For the topping, combine maple sugar, flour, cinnamon, cinnamon chips, and pecans in a small bowl. Add melted butter and toss mixture with a fork until crumbly; set aside.

Whisk together flours, baking powder, baking soda, cinnamon, and salt in a large bowl. Make a well in the center of the mixture. Combine buttermilk, yogurt, egg, maple syrup, oil, and vanilla in a medium bowl; add to flour mixture and stir just until combined. Fill each baking cup 2/3 full of batter; sprinkle topping evenly over muffins.

Bake for 14 to 15 minutes, until a toothpick inserted in the center comes out clean. Let muffins cool in pan on a wire rack for 2 minutes before removing from pan to serve or cool completely. Store leftover muffins in an airtight container at room temperature up to 2 days.

If I’m going ‘decadent,’ my fav fall breakfast would have to be pumpkin cinnamon rolls…I have a great recipe from Vegetarian Times that is easy to put together and just tastes like autumn in a tasty, sweet bite. 🙂 For more normal breakfasts, I like doing oatmeal with raisins and pears or apples chopped up…maybe some pecans if I’m feeling a little fancy!
