flourless chocolate-hazelnut cookies


Back-to-back cookie posts can only mean one thing: cookie season is officially upon us! No matter how full life becomes, I always leave room for a quick batch of cookies. These flourless chocolate-hazelnut wonders fit into my schedule easily – the dough comes together in less than five minutes with only a handful of ingredients.

Incredibly rich and chewy, these cookies are sure to please the Nutella lovers in your life (they also happen to be gluten-free). December’s Chocolate Party theme is chocolate cookies; see more creations below.

Flourless Chocolate-Hazelnut Cookies | Tutti Dolci

Flourless Chocolate-Hazelnut Cookies
1 cup Nutella
1/2 cup sugar
1/4 cup light brown sugar
1 large egg
1/2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
4 ounces milk chocolate with hazelnuts, chopped (I used Lindt)
1/2 cup hazelnuts, chopped

Combine Nutella, sugars, egg, vanilla, baking soda, and salt in a large mixer bowl and beat at medium speed until combined, about 2 minutes. Add chopped chocolate and hazelnuts; mix in just until combined. Cover dough and chill for one hour.

Preheat oven to 350°F and line two baking sheets with silicone mats or parchment paper. Form 1 1/2″ balls of dough and place two inches apart on prepared baking sheets; flatten mounds slightly with the tines of a fork. Bake, rotating pans halfway through, for 9 minutes, until set. Cool for 5 minutes on baking sheets, then transfer cookies to a wire rack to cool completely. Store in an airtight container at room temperature up to 3 days.
