I’ve been on a spice kick lately and I can’t get enough chipotle chili pepper in my life. The smoldering flavor enlivens baked sweet potatoes and a few dashes of Chipotle Tabasco is my preferred quesadilla topping. When visions of a chocolate cookie laced with warming cinnamon and smoky chipotle entered my mind, I went for it. After all, I loved spicy Dulce de Leche brownies. These chocolate spice cookies remind me of a flourless chocolate cake, laden with chunks of dark and semisweet chocolate. Enjoy warm (as though you’d be able to resist a fresh cookie!) with a glass of ice-cold milk.
Chocolate Spice Cookies
1 3/4 cups flour
6 Tbsp unsweetened cocoa
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/8 tsp chipotle chili powder
1/2 cup unsalted butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla extract
1 large egg
2 ounces chipotle chili dark chocolate, chopped
1/4 cup semisweet chocolate chips
Cinnamon-Sugar
1 1/2 Tbsp sugar
1/2 tsp cinnamon
Whisk together flour, cocoa, baking powder, salt, cinnamon, and chipotle chili powder in a medium bowl. Beat butter, sugars, and vanilla in a large mixer bowl on medium speed until pale and fluffy. Beat in egg until combined. Reduce speed to low and gradually add flour mixture; beat just until incorporated (dough will be crumbly). Fold in chocolate; cover and refrigerate 30 minutes.
Preheat oven to 350°F and line two baking sheets with silicone mats or parchment paper. Combine sugar and cinnamon in a small bowl. Form 1 1/4″ balls of dough and roll in cinnamon-sugar; place two inches apart on prepared baking sheets. Bake, rotating pans halfway through, for 9 minutes or until tops are cracked and almost set. Cool for 2 minutes on baking sheets, then transfer cookies to a wire rack to cool completely. Store in an airtight container at room temperature up to 3 days.

As soon as you said they are like a flourless chocolate cake it made me want one. They look and sound amazing. Chocolate and spice go so amazingly well together.
Sweet and spicy, I like it! I’m a big fan of chipotle and cayenne with chocolate for an extra mmph…I love the cinnamon and sugar topping too. These look great!

I’m with you all the way…chocolate, spice and chilies are a great combination. I haven’t seen the chipotle chocolate before.
I found the chipotle chocolate at World Market. If you can’t find any, I’d just use dark chocolate and bump up the chipotle chili powder to 1/4 teaspoon.

Yum! There is a spicy hot chocolate at one of the coffee shops in my neighborhood that I can never get enough of, so these cookies might be able to satisfy that same craving.
