Description

Festive homemade peppermint bark is the perfect treat for holiday parties and gift giving. Made with the finest ingredients, this peppermint-topped chocolate candy is a classic seasonal favorite. Recipe yields 32 squares.


Ingredients

  • 1/2 pound bittersweet chocolate, chopped
  • 1/2 pound semisweet chocolate, chopped
  • 1 pound white chocolate, chopped
  • 1/4 tsp peppermint extract
  • 6 ounces candy canes, crushed

Instructions

  1. Line an 11 x 17-inch jelly roll pan with parchment paper.
  2. Place bittersweet and semisweet chocolate in a double boiler or in a heat-proof bowl over a saucepan of gently simmering water. Slowly melt the chocolate, stirring occasionally until glossy and smooth. Pour melted chocolate into prepared pan and spread with an offset spatula into an even layer. Chill in the refrigerator until set, about 25 minutes. Remove pan from refrigerator and leave at room temperature while melting white chocolate.
  3. Place white chocolate in a double boiler or in a heat-proof bowl over a saucepan of gently simmering water. Slowly melt the chocolate, stirring occasionally until glossy and smooth. Remove from heat and stir in peppermint extract; let stand 5 minutes. Pour melted white chocolate over dark chocolate layer; carefully spread with an offset spatula into an even layer. Sprinkle with crushed candy canes. Chill in the refrigerator until completely set, about 1 hour.
  4. Carefully lift parchment paper and place bark on a cutting board; trim away any ragged edges, then use a sharp knife to cut into squares. Pack in an airtight container with wax paper between layers; store in the refrigerator up to 2 weeks. If packaging bark for gifts, place it in cello bags separate from other treats.

    1. Hi Marley, I recommend using chocolate bars for this recipe. Chocolate chips have stabilizers in them, and don’t melt as well as the bars do.

        why do the layers mix when the white is being spread on?? I mean, how can you avoid it?? making these as wedding favors, so I really really need help!! thanks!

      2. Hi Marley, when you add the white chocolate, use a metal offset spatula to carefully spread it over the dark layer. You’ll want to work quickly to avoid the dark layer melting and bleeding into the white layer. I try to use the spatula to just move the white chocolate gently across the dark layer, without pulling up the dark chocolate layer below. Hope that helps! 🙂

  1. I didn’t use your recipe, but could you tell me why the two layers came apart? Thanks for your help…will use your recipe next time.

    1. Hi Sandi, I’ve never had the layers separate. If you try again, use high quality white chocolate with cocoa butter (I always use Ghirardelli baking bars). If you use white chocolate that contains an oil (like palm oil or coconut oil), the fat will be incompatible with the dark layer and the layers will separate. Hope that helps!
