The flavors of these adorable mini carrot cake cupcakes are perfectly balanced. Tangy cream cheese frosting gives way to the spicy and moist carrot cake. Chopped walnuts folded into the batter and used again as a topping provide great texture. This is an ideal dessert to welcome spring!

Mini Carrot Cake Cupcakes

Batter
3/4 cup whole-wheat flour
1/2 cup flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup canola oil
3/4 cup packed brown sugar
2 large eggs
1/2 cup natural unsweetened applesauce
1/2 tsp vanilla extract
1 1/2 cups shredded carrots
1/4 cup finely chopped walnuts

Frosting
4 ounces reduced-fat cream cheese, softened
3/4 cup powdered sugar
1/2 tsp grated lemon zest
2 Tbsp finely chopped walnuts

Preheat oven to 350°F and line a 12-cup mini muffin pan with baking cups. Whisk together flours, baking soda, salt, cinnamon, and nutmeg in a medium bowl. Whisk together oil, brown sugar, and eggs in a large bowl. Whisk in applesauce, vanilla, and carrots. Add flour mixture, stirring just to combine. Fold in walnuts.

Fill each baking cup with a slightly rounded tablespoon of batter, to about 1/4 inch below the top of the liner. Bake until a toothpick inserted in the center comes out clean, about 15 minutes. Cool the cupcakes for 5 minutes in the pan on a wire rack. Holding an edge of each liner, carefully lift the cupcakes from the pan and place them on the wire rack to cool completely.

To make frosting, combine cream cheese, powdered sugar, and lemon zest in a medium bowl, beating with a mixer on medium speed until smooth and creamy. Frost cooled cupcakes and sprinkle with walnuts. The cupcakes can be covered and refrigerated for up to 3 days. Bring to room temperature before serving.
